Slightly cold Saturday evening combined with friends – too much fun isn’t it? Last week an old common friend, from Gurgaon, visited us. Too many gossips and loads of fun. Cold evenings needs the company of hot tea. I quickly prepared tea and served some Homemade Atta Biscuits with tea. Amit just cannot drink tea alone, he needs some cookies or biscuits with it.

Homemade Atta Jaggery Biscuits

We all started remembering old times and the discussion gradually moved on to my food blog. He wasn’t able to understand why I blog only about baking and not the other forms of cooking.

I knew that a short answer will not work. Purposely offered the Homemade Atta Biscuits and asked our friend to give feedback on taste. I told him that these are bought from one of the most famous shops from Pune that is known for these Atta Biscuits.

I was now waiting for his feedback. Before he uttered a word, his face said all. He was like wow, these biscuits are awesome. “I bet, we don’t get such biscuits in Gurgaon”, he said. “Please can you get me some packs, I would want to carry them with me.”

Amit and I started laughing at him and he was in an utter state of “What?”

And therefore, like others, I never wanted to throw everything I cook on the internet.

My vision was clear from day one. I wanted to encourage people to make healthy, whole wheat, eggless bakes at home. I wanted help homemakers to become home bakers. And that what I do on my blog and on my workshops.

The biscuits you just ate are not market bought, they are homemade atta biscuits. These biscuits are made with clarified butter (pure desi ghee) and jaggery. There is no white sugar, there no maida, no chemical, and no preservative.

My friend heard all of this and was in utter shock. What? No sugar? No Maida? Atta Biscuits? He was completely zapped. Bhabhi, I am a great fan of your Whole Wheat Brownies and Fudgy Walnut Brownie, but I never knew that homemade atta biscuits could taste so amazing.

Yes, this is what home baking can do.

“But are their folks who understand the benefits of home baking”, he asked. “Is India even ready to take up Baking?

I told him that there is no easy answer to this and I will take this up some other time in detail.

A feeling of satisfaction

My friend had honest and logical questions. I know it is a difficult journey and I am enjoying it. I will continue to spread awareness of healthy baking and people will gradually understand. There is already a lot of noise in the space of healthy eating.

He had a joyful smile on his face and glittering eyes. “It’s your passion towards baking that will help you create your own space. Good Luck” and he left our home with so much encouragement in me.

Let's make the Homemade Atta Biscuits

Here we start with the jaggery biscuits recipe. I have used Whole Wheat Flour and Organic Jaggery Powder for this recipe. Before using the dry ingredients, I sifted them separately.

In a bowl take flour, jaggery powder, salt, and baking powder and mix all the dry ingredients.

Add clarified butter to the dry ingredients. Make sure the clarified butter you are using is at room temperature but not melted one. Now using your fingertips mix clarified butter with dry ingredients. It will look like breadcrumbs.

Add approximately 2 tablespoons of milk and bind the dough. Every flour has different absorption capacity. If you feel your dough is dry, add 1 tablespoon of milk extra.

Do not knead it more else it will form gluten and result will be chewy cookies.

Meanwhile, keep the oven for preheating at 160 °C.

Homemade Atta Biscuits

Take a butter paper and transfer the dough to it. Using a rolling pin, roll the dough into an even sheet of a ½ inch thickness.

Don’t worry if you don’t have any cookie cutter. Use any bottle cap to cut the same shape and even size cookies.

Let’s Bake

Arrange all the cookies on a greased baking tray leaving some space in-between. Bake these cookies in a preheated oven at 160 °C for 15-18 minutes or until the edges turn golden.

Once baked, take the tray out from the oven and transfer all the baked cookies to a wired rack.

Your Atta Jaggery Cookies with all the goodness of jaggery and clarified butter (ghee) are ready to serve.

You can bake these cookies at 150 °C for 15 minutes.

Without Oven Baking

|Recommended Read: Cookies without an oven

  • Like all other recipes for cookies, these cookies can also be baked on a gas stove. To bake these cookies on the gas stove all you need a heavy bottom pan with lid (Pressure cooker or idly maker), salt and a metal stand.
  • Place the pan on a gas stove and put salt in it. Spread it evenly. Now place a metallic stand on salt.
  • Close the lid and start heating it on medium flame.
  • After 10 minutes of heating, place the baking tray with cookies on the metallic stand and close the lid again.
  • Continue to bake the cookies on a medium flame for about 18-20 minutes.

    • In a bowl take flour, jaggery powder, salt and baking powder.
    • Mix all the dry ingredients.
    • Add clarified butter into the dry ingredients and start mixing it.
    • Start adding milk to bind the mixture.
    • Prepare the dough and transfer it onto a butter paper.
    • With the help of a rolling pin, roll the sheet evenly.
    • Meanwhile, preheat the oven at 160 °C.
    • Using any cookie cutter, cut even size cookies.
    • Place these cookies on a greased tray.
    • Bake these cookies in a preheated oven for 15-18 min.
    • Transfer the baked cookies on a wired rack and let them cool.
    • Your Atta biscuits with all the goodness of jaggery and clarified butter (ghee) are ready to serve.

    Notes

    Recipe Notes
    1. You can use powdered sugar in case you don’t have jaggery powder. Use 60 gm of sugar.
    2. You can add chopped nuts and dry fruits to the dough.
    3. If you are working in a hot and humid weather, after preparing the dough, keep it in the refrigerator for 30 minutes. It will make the dough easy to handle.
    4. You can substitute clarified butter (ghee) with the same amount of unsalted butter.
    5. If you are going to use salted butter, then skip adding salt.
    6. If you want your cookies to be crispy, do not over knead the dough.
    7. You can bake these cookies in Microwave convection at 150 °C for 15 minutes.
    8. To bake these cookies on the gas stove take a heavy bottom pan with lid (Pressure cooker or idly maker), salt and a metal stand. Place the pan on a gas stove. Add salt to it and place a metallic stand on salt and heat it for 10 minutes. Now, place the baking tray with cookies on the metallic stand and close the lid again and bake the cookies on a medium flame for about 18-20 minutes.

  • Ma’am I baked at 160 degree and cookies burnt in 10mins…I tried another recipe same happened -they burn from bottom…upper crust isn’t fully crusty..please help what is the issue..🙏

  • Thanks for this wonderful and healthy cookie recipe. I made it and it turned out very yummy. I feel the cookies have not been evenly baked. Minimum temperature of my convection is 180 and I baked it 15 mins one side and approx 8 mins other side

    I tried your recepie today and the dough was too crumbly, even after adding 3 table spoons of milk. I read in other blog of yours that the amount of liquid depends on the flour as well. Can you tell me how it should feel to touch after combining all ingredients? It was difficult to roll out the dough as it kept falling apart.

    All other ingridents I added as you mentioned using weighing scale.

      Since it has whole wheat and Jaggery as the ingredients, and both the ingredients are difficult to bind, it will be difficult to shape the cookie. I generally use parchment paper and roll my dough between the layers.

  • Awesome wheat cookies, very simple recipe, easy to do, taste awesome. In my convection oven it took 160 degree Celsius 18 minutes, and reduced to 150 degree in Celsius baked for 5 mins.     I am interested in trying out these atta biscuits and went through your recipe. I saw this step – “Wrap the dough using clingwrap and refrigerate for 30mins” in most other cookie recipes, but not this one. Is this step not required here?

  • Hi mam.. thanks for the wonderful recipe.. I tried the same with my traditional idli cooker and followed all the instructions to T.. my biscuits took a little more than 20 mins to get baked. The top layer ie the biscuits on top plate came out well but the second layer got fully burnt.. can I please know how to overcome this and bake 2 layers at the same time in idli cooker ? Thanks in advance

      Try the following two things.
      1. Bake at the lowest flame.
      2. If the Idli Maker height is low, switch the second and top layer with each other after 10 minutes of baking.
