Recently we reviewed Roasted Semolina with Wheat Bran and made Savory Semolina Muffins from the product. We were extremely happy with the quality of the Semolina. The recipe came out to be tender and flavorful. This encouraged us to check another healthy product from the same company FoodThink and that is Wheat Bran.
What is Wheat Bran?
The hard outer layer of grains like wheat, oats, and barley is called bran. When wheat is processed, it leaves the brown outer layer as its by-product, called wheat bran. It is packed with nutrition and dietary fiber. When wheat bran hydrates with water, it expands. When we eat wheat bran, it absorbs water and expands in our digestive system. This is one prime reason of the common use of wheat bran in cereals and muffins. Wheat bran helps in regulating the digestive system.
The nutritional benefits of wheat bran are mainly undisputed. One cup (58 g) contains 99% of the US recommended daily allowance (RDA) of fiber, nine grams of protein, and 34% of the RDA for iron. It is also high in protein, magnesium, manganese, niacin, phosphorus, zinc and vitamin B6. Wheat Bran is low in fat, with no cholesterol, and no sugar or sodium.

Why FoodThink Superfine Wheat Bran?
There are no standard methods available for flour milling. This results in different bran particle sizes. Large wheat bran particles lead to higher water absorption. This helps in creating volume in the bread loaf. But at the same time, they impact the dough structure.
The sharp bran particles penetrate the gas bubbles during the leavening process. Consequently, the gas cell structure of the dough begins to collapse. This is one prime reason of why whole wheat products are denser with rough crust and gritty texture.
FoodThink Superfine Wheat Bran is fine coarse bran. It has low moisture content since it is gently roasted. When used in bread dough, the dough rose properly. The bran particles did not damage the gas cell structure. The smaller wheat bran particles also help in releasing vitamins and other components from the outer cell of the kernel.
We made our recipe of Aloo Tikki Burger, the final product was soft and spongy. The aroma and texture were great when baked. We did not find the wheat bran to be altering the taste, color or texture of the recipe, which is really good.

Storing Wheat Bran
In contrast to wheat germ, wheat bran has a high oil content, so it can go rancid very quickly. Store wheat bran in an airtight container. Prefer keeping the container in a cool and dark place such as the back of a cupboard or the fridge.
