Whole Wheat Vegan Banana Bread
In a bowl, mash bananas and prepare a smooth puree. Overripe bananas are best to bake this bread as they provide full flavor as well keep the bread moist? In case you do not have overripe bananas, there is nothing to worry. Just keep the bananas in the oven at 200 degree Celsius for 10 minutes.
Add organic sugar to the banana puree and mix it well. I prefer to use less sugar for my bread as I love the natural sweetness that comes from bananas. If you like your bread sweeter then you can add up to ¾ cup of sugar.
Add oil to the banana sugar paste. You can use olive oil as well for this bread. However, I have used rice bran oil in my bread.
Add Cinnamon powder, Nutmeg powder and Vanilla essence to the mixture and stir it well. Choice of spices totally depends on you. Cinnamon goes well with banana. If you don’t like these spices then you can skip. But trust me cinnamon and nutmeg take this bread to another level.
In a different bowl sift whole wheat flour with baking powder, baking soda, and salt. Now add dry ingredients to wet ingredients. Fold gently.
The batter would be thick just like dough for bread. Don’t make any liquid adjustments or add milk. The batter for banana bread should be thick. Meanwhile, preheat the oven to 180 degree Celsius.
Add sunflower seeds to the batter and mix it. Take a loaf tin. Place a parchment paper in it. Pour the batter into it and with the help of a spatula, level it. Sprinkle chopped walnuts on it.
Let's Bake
Bake it in a preheated oven at 180 degree Celsius for 30 minutes or until it passes the toothpick test.
Once done, take the bread out of the oven and let it rest for 5 minutes before de-molding. If you de-mold the bread as soon as it comes out of the oven, you are risking your bread to break. Remember the baking is still happening within the bread because of the heat inside. It is still too tender for you to hold. Hence it is important to let the bread rest for at least 5 minutes before you de-mold.
After resting it for 5 min, De-mould the bread.
Now slice and serve Healthy Vegan Whole Wheat Banana Bread. I prefer to have banana bread when it is still warm.

Hi Sonia, thank you very much for this recipe. I make banana bread almost every week and was looking for a recipe which was vegan and also used wheat flour. Hi Sonia… I just tried your receipe. It taste good, how ever wasn’t happy with the texture, thought the cake was a bit dry…even the batter was a bit dry compared to banana cake batters I have made before. What do u think I could have added to keep it a big moist or less dry.

Thanks for your liking the recipe and trying it out. Did you use overripe banana’s? If the banana’s were less overripe or they were regularly ripe bananas, add one more banana to add that extra moisture in your bread.

The bananas were over ripe..I used the same bananas and tried 2 different receipes, the other one came out well. Is there anything else I could add to increase the moisture content?
You may add 1/4 cup of soya milk to increase the moisture content.
How about plain milk?

Ordinary refined sugar/brown sugar is usually processed with bone char, so it cannot be considered vegan. Any alternatives you would use?
I have used organic sugar for this recipe however as an alternate you can use Jaggery powder.
