Spicy Semolina Cake

This spicy semolina cake is a perfect way to make your fussy children eat vegetables and they are going to enjoy it and demand for more.

Ingredients

  • 1 cup Semolina
  • 1/2 cup Curd
  • 1/2 cup Water
  • 1 tsp Salt
  • 1/2 tsp Red Chilli Powder
  • 1 tsp Cumin Seeds
  • 1 tsp Mustard Seeds
  • 1 tbsp Chilli Flakes
  • 1 tbsp Oregano
  • 1/2 tsp Baking Soda
  • 1/2 cup Onion Chopped
  • 1/4 cup Beans Chopped
  • 1/4 cup Bell Pepper Chopped
  • 1/4 cup Carrot Grated
  • 1/4 cup Peas
  • 1 tbsp Ginger Grated
  • 1 tbsp Green Chilli
  • 1 tbsp olive oil

Instructions

  • Take a bowl and in the bowl, mix semolina with curd, water and all the spices. Keep this batter aside for 10 minutes.
  • Heat a pan and add oil. Once the oil is hot, add mustard and cumin seeds. Add chopped onion and saute it for 5 min. Add chopped beans, chopped bell pepper and peas to onions and continue to saute these vegetables for another 5 minute.
  • Add sauted vegetables along with grated carrot, ginger and green chillis to the batter and make a smooth batter of medium consistency.
  • Now add baking soda and transfer the mixture into a greased mould (I used a silicon mould to avoid any greasing). Sprinkle chilli flakes and oregano on top of it. Keep this mould in a preheated oven @180 C for 20-25 min or till it passes the toothpick test.
  • Slice it once it comes to room temperature and serve it with your choice of sauce.
