Eggless Atta Biscuits with Jaggery

  • In a bowl take flour, jaggery powder, salt and baking powder.
  • Mix all the dry ingredients.
  • Add clarified butter into the dry ingredients and start mixing it.
  • Start adding milk to bind the mixture.
  • Prepare the dough and transfer it onto a butter paper.
  • With the help of a rolling pin, roll the sheet evenly.
  • Meanwhile, preheat the oven at 160 °C.
  • Using any cookie cutter, cut even size cookies.
  • Place these cookies on a greased tray.
  • Bake these cookies in a preheated oven for 15-18 min.
  • Transfer the baked cookies on a wired rack and let them cool.
  • Your Atta biscuits with all the goodness of jaggery and clarified butter (ghee) are ready to serve.

Notes

Recipe Notes
  1. You can use powdered sugar in case you don’t have jaggery powder. Use 60 gm of sugar.
  2. You can add chopped nuts and dry fruits to the dough.
  3. If you are working in a hot and humid weather, after preparing the dough, keep it in the refrigerator for 30 minutes. It will make the dough easy to handle.
  4. You can substitute clarified butter (ghee) with the same amount of unsalted butter.
  5. If you are going to use salted butter, then skip adding salt.
  6. If you want your cookies to be crispy, do not over knead the dough.
  7. You can bake these cookies in Microwave convection at 150 °C for 15 minutes.
  8. To bake these cookies on the gas stove take a heavy bottom pan with lid (Pressure cooker or idly maker), salt and a metal stand. Place the pan on a gas stove. Add salt to it and place a metallic stand on salt and heat it for 10 minutes. Now, place the baking tray with cookies on the metallic stand and close the lid again and bake the cookies on a medium flame for about 18-20 minutes.
