Easy Homemade Strawberry Cobbler Recipe

Cobblers are the best dessert options. That golden crispy crust, the soft underside, and then that sweet, gooey fruit, can make anyone its fan. Every season when strawberries are available in the market, eggless strawberry cobbler is one “Must bake” dessert at my home.

To enjoy strawberry cobbler in the offseason, I always keep the stock of frozen strawberries with me. This must give you an idea about my love for this dessert.

Baking with seasonal fruits is my weakness. Eggless Strawberry Cobbler Preparation

Here we start with eggless strawberry desserts. In a mixing bowl take 150 gm chopped strawberries. Add 50gm powdered sugar and 1 tsp lemon juice to it. Stir it and let the mixture rest for 10 minutes. This resting time will let the sugar dissolve well.

To prepare the crust, in a bowl take 70gm all-purpose flour, 60gm powdered sugar, ½ tsp baking soda, ½ tsp baking powder, and a pinch of salt. Add 50gm unsalted cold butter. Using fingertips, mix the butter with all the dry ingredients. The mixture should look like bread crumbs.

Now at this stage start adding milk to make a thick paste of it. In total, I have used 80gm of milk. Add ½ tsp Vanilla essence. Mix everything and the batter is ready.

Here I have used 6 inches of a ramekin to bake this strawberry cobbler. You can use smaller ramekins or bake it in any baking tin/pan.

First, pour the prepared strawberry mixture into the ramekin and make an even layer of it. Now pour the prepared thick batter over it and level it using a spoon.

Bake it in a preheated oven at 180°C for 35 minutes. The baking time can vary depending upon your oven size and model. You know your oven well so adjust it accordingly. The best way to check if it’s done or not, the top layer will be firm and baked. It also becomes light brown or golden.

Because I know my oven and I know it takes exactly 35 minutes to bake this cobbler so, after 35 minutes, I have taken it out.

The strawberry cobbler is baked and has got a golden color as well.

This strawberry cobbler takes best if served hot. A scoop of ice-cream as a simple bake addon increased the fun to have this amazing dessert.

  • 150 gm Fresh Strawberries
  • 1 tsp Lemon Juice
  • 50 gm Sugar

Instructions

  • In a bowl, take flour,sugar, and butter. Mix everything until it looks like bread crumbs.
  • Add baking soda, baking powder, essence, and milk.
  • Make a thick batter of dropping consistency. Now keep aside.
  • In a different bowl, mix strawberries, sugar, and lemon juice. Let it rest for 10 minutes.
  • Now in the baking mold, spread the fruit mixture.
  • Top the fruit mixture with a prepared thick batter.
  • Using a spatula, spread itevenly.
  • Bake it in a preheated oven at 180 C for 35 min.
  • Once baked, serve hot with a scoop of ice-cream.
